If you have read one of my more recent post it was about my New Year’s “Revolution”. One of the very few goals I had set for my self was to IMPROVE MY HEALTH. This means to increase my physical activity and consume a balanced diet. As I was browsing Instagram I saw a photo of Zucchini Spaghetti. This inspired me to create my own recipe. This is a basic recipe and you can add or change it as you like. I used a large zucchini/courgette to make two servings on the pasta. This recipe requires minimal ingredients and takes a only 10 minutes to prepare.
1 Large zucchini/courgette
1 can of diced tomatoes
2 garlic gloves
Parmesan cheese (option)
- There is an utensil that cuts the zucchini but because I do not have it, I used a peeler to make thin pieces of the zuccchini and then I cut them into thin spaghetti sized strips.
- Boil the zucchini in hot water for 2 minutes.
- Put one can of diced tomatoes in a pot and start to heat them. Add garlic, onion or both into the mixture.
- Season to taste.
- Serve the sauce onto of the zucchini like bolognese sauce.
