Basic Zucchini Spaghetti & Tomato Topping – Recipe

Hi everyone!

If you have read one of my more recent post it was about my New Year’s “Revolution”. One of the very few goals I had set for my self was to IMPROVE MY HEALTH. This means to increase my physical activity and consume a balanced diet. As I was browsing Instagram I saw a photo of Zucchini Spaghetti. This inspired me to create my own recipe. This is a basic recipe and you can add or change it as you like.  I used a large zucchini/courgette to make two servings on the pasta. This recipe requires minimal ingredients and takes a only 10 minutes to prepare.

1 Large zucchini/courgette

1 can of diced tomatoes

2 garlic gloves

Black Pepper

Parmesan cheese (option)

  1. There is an utensil that cuts the zucchini but because I do not have it, I used a peeler to make thin pieces of the zuccchini and then I cut them into thin spaghetti sized strips.
  2. Boil the zucchini in hot water for 2 minutes.
  3. Put one can of diced tomatoes in a pot and start to heat them. Add garlic, onion or both into the mixture.
  4. Season to taste.
  5. Serve the sauce onto of the zucchini like bolognese sauce.

And Voilà!

P.s. I am feeling a little uninspired lately and I would love if can leave a few ideas of what you would like to see in upcoming posts.
